  Gretel Dunsing's Herring Salad

          Those of you who remember Gretel, will recall that, on her extensive teaching tours, she liked to make Herring Salad for her hosts.

           Although Gretel grew up in Berlin, her early childhood was spent in Mecklenburg-Vorpommern (Pommerania-anterior. Mecklenburg-Posterior is now Polish). Those German states that border the oceans -both the North-sea and the Baltic, have a great fondness for fish dishes. Herring Salad can be quite labor intensive and complicated. Here then is Gretel's recipe for the short version:

Gretel's Herring Salad
Herring Salad with Beetroot
Ingredients

1 large jar of pickled Herring , skin pulled off and center spine removed - (although bones can be eaten) Cut pieces into small bite-size chunks

1 small can of red beets. Drain beets and dice them

1 large tart apple (or two small ones) Peel apple, remove core and pits. Dice.

1 or 2 peeled and cooked potatoes. Dice.

1 small tub of sour cream.

Directions

Combine all ingredients in a bowl, cover and allow to marinade. The amount of sour cream you use.depends on your preference.
